Yield Makes 3 pt.
The subtle, sweet flavor of pears is perfect for Pear Preserves. Pears begin appearing in farmer's markets right at the start of fall

Ingredients

  • 8 Bartlett pears, peeled and cut into 1/4-inch-thick slices
  • 3 cups sugar
  • 2 lemons, thinly sliced

How to Make It

  1. Cook pears, sugar, and lemons in a heavy 3-qt. saucepan over medium heat, stirring often, 5 to 7 minutes or until sugar dissolves. Increase heat to medium-high; cook, stirring occasionally, 30 minutes or until mixture is thick and golden and pears are tender. Cool 10 minutes. Spoon into 3 (1-pt.) widemouthed jars. Store in refrigerator up to 3 weeks.
