  • 6 1/2 pounds pears, peeled, cored, and cubed
  • Grated rind of 1 large orange
  • Grated rind of 1 large lemon
  • Juice of 1 large orange
  • Juice of 1 large lemon
  • 1 large cooking apple, peeled, cored, and cubed
  • 6 cups sugar
  • 1 (15-ounce) package raisins
  • 1 cup grape juice
  • 2/3 cup vinegar
  • 2 teaspoons ground cloves
  • 2 teaspoons ground mace
  • 1 teaspoon salt
  • 3 unbaked (9-inch) pastry shells


  1. Combine all ingredients, except pastry shells, in a non-aluminum stock pot; bring to a boil. Cook, uncovered, over low heat 2 hours or until thickened, stirring occasionally.
  2. Pour 4 cups filling into each pastry shell. Bake at 425° for 40 minutes. Cool before slicing.
