Pear Mincemeat Pie

6 1/2 pounds pears, peeled, cored, and cubed
Grated rind of 1 large orange
Grated rind of 1 large lemon
Juice of 1 large orange
Juice of 1 large lemon
1 large cooking apple, peeled, cored, and cubed
6 cups sugar
1 (15-ounce) package raisins
1 cup grape juice
2/3 cup vinegar
2 teaspoons ground cloves
2 teaspoons ground mace
1 teaspoon salt
3 unbaked (9-inch) pastry shells


Combine all ingredients, except pastry shells, in a non-aluminum stock pot; bring to a boil. Cook, uncovered, over low heat 2 hours or until thickened, stirring occasionally.

Pour 4 cups filling into each pastry shell. Bake at 425° for 40 minutes. Cool before slicing.
