Pear and Cranberry Stuffed Pork Roast

    This was awesome! Served for Christmas dinner; everyone raved (even the professional chef)! The stuffing was SO good that next time I will double the recipe to serve additional on the side. Served with garlic mashed potatoes and butternut squash. The pears took well over 5 minutes to saute to 'just-caramelized' state; patience with this step!

    This is beautiful to look at and very easy to make. WF butcher cut the humanely-raised pork loin flat, so it rolls up like a roulade. The filling is just a bit bland, and I'm wondering whether garlic and a dash of crushed red pepper might liven it up. Still, it's very festive and ridiculously easy. Served with a potato gratin, steamed kale, and a buttermilk pie for Christmas dinner.
