Pear Cheese Walnut Salad
Pear Cheese Walnut Salad Salad: One head Bibb lettuce, chopped. One head Romaine lettuce, chopped. 1/2 cup bag finely chopped walnuts, toasted. (just toast in a dry skillet 3-4 minutes). 2 oz.+ Gruyere cheese cubed. (I truly suggest going to a cheese shop and tasting it then buying it. I bought some from my cheese shop and some from King Soopers and Kings' was not very good at all. If you can't go to a cheese shop, substitute with Jarlsburg or super premium Swiss.) 3 fresh pears (any variety) skinned and chopped, or 1-2 cans canned pear halves in lite syrup cut in large chunks. (if you buy canned (I did) rinse then cut). Dressing: 1/4 cup Extra Virgin Olive Oil 1/4 cup Balsamic Vinegar 1 Shallot very finely chopped 1 TBSP bottled Dijon mustard Bottle, mix/shake, and sit for 30 minutes or so. (I made mine the night before) Just don't let it get too cold before serving or it gets too thick.
