Peanut Dressing

Yield 3 cups (or enough to stuff one 3-pound chicken)


  • 2 cups dry roasted peanuts, finely ground
  • 1 1/2 cups toasted soft breadcrumbs
  • 2 tablespoons butter or margarine, melted
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 egg yolk
  • 1/2 cup chicken broth

How to Make It

  1. Combine peanuts, breadcrumbs, butter, salt, and pepper, stirring lightly; add egg yolk and broth, mixing well.

  2. Spoon dressing into a greased 1-quart casserole. Bake at 350° for 30 minutes or until lightly browned.
