Make these easy peanut butter truffles by starting with peanut butter chips, cocoa, butter and condensed milk, then roll in your choice of nuts, graham crackers crumbs, coconut or even sea salt,
3/4 cup butter
1 cup peanut butter chips
1/2 cup baking cocoa
14-oz. can sweetened condensed milk
1 tablespoon vanilla extract
Garnish: baking cocoa, finely chopped nuts, graham cracker crumbs
How to Make It
Combine first 4 ingredients in a large saucepan over low heat. Stir constantly until mixture is thick and glossy, about 9 minutes. Remove from heat; stir in vanilla. Chill for 4 hours or until firm enough to handle.
Shape into one-inch balls; roll in cocoa, nuts or crumbs. Chill until firm, about one hour. Store, covered, in the refrigerator.
I was really excited about this recipe because it looks so easy. I followed the directions and after 4 hours of letting the mixture chill it was still very gooey so I let it sit in the fridge overnight. Even then It was still sticky and gooey but I thought I would try to dip them in the nuts anyway and they stayed in a ball for a bit but then they turned into pancakes. I even placed them on a chilled platter. I tried to add flower and more cocoa to firm it up but that did not work.
So sad this did not work out because it tastes good but just wont firm up into a truffle ball!
