Peanut Butter Chocolate Chunk Brownies with Chocolate Ganache

  • 2 stick(s) Butter, softened
  • 1 3/4 cup(s) Sugar
  • 1/2 teaspoon(s) Salt
  • 2 teaspoon(s) Vanilla Extract
  • 1 cup(s) Peanut Butter
  • 2 Eggs
  • 1 Egg Yolk
  • 2 cup(s) Flour
  • 1 1/2 cup(s) Chocolate Chunks
  • Ganache
  • 1 1/2 cup(s) Semisweet Chocolate Chips
  • 1/2 cup(s) Heavy Cream
  • 1 tablespoon(s) Butter, softened

Preparation

  1. 1. preheat oven to 350 - grease 9x13 pan
  2. 2. cream butter and sugar with electric mixer - when light and fluffy, add PB and beat until incorporated - beat in eggs, egg yolk and vanilla - by hand, stir in flour and chocolate chips
  3. 3. spread in pan
  4. 4. bake on center rack for 35-40 minutes - cool completely

  5. Ganache
  6. 1. put chocolate chips in heat-proof bowl
  7. 2. in saucepan or microwave-safe measuring cup, heat cream until it starts to boil
  8. 3. pour cream over chips and let stand for a minute
  9. 4. stir well to melt chips, stir in butter
  10. 5. spread over cooled brownies and let set
