3 tablespoons chilled butter, cut into small pieces
2 tablespoons sliced almonds, toasted
6 cups sliced peeled peaches (about 3 pounds)
1 tablespoon granulated sugar
2 teaspoons cornstarch
2 teaspoons lemon juice
3/4 teaspoon minced peeled fresh ginger
How to Make It
Preheat oven to 375°.
Lightly spoon flour into a dry measuring cup, and level with a knife. Combine the flour, 1/4 cup granulated sugar, and brown sugar in a bowl. Cut in butter with a pastry blender or 2 knives until crumbly. Stir in almonds.
Combine peaches and remaining ingredients in a bowl. Spoon peach mixture into an 8-inch square baking dish. Sprinkle with flour mixture. Bake at 375° for 45 minutes or until lightly browned and bubbly.
Quick to put together and delicious recipe. We used farmer's marker peaches that were very sweet and probably could have reduced the sugar in the recipe. I did grate the ginger, per another review. Loved the almonds in the topping rather than oats as it marries well with the peach flavor. Will probably make again very soon.
I'm not much of a dessert preparer, but thought I'd tackle this, with all the peaches starting to appear at the grocery store. I made it as is... I thought it was easy and absolutely delicious! Not too sweet... I loved the tangy peach flavor.... it was wonderful. Also, this makes 5 generous servings.
Loved this! I definitely added too much lemon juice and didn't have brown sugar to add, so I'd imagine the real version tastes even better. Will make again, probably tomorrow actually, our neighbor just gave us more peaches.
We love ginger, but it just didn't seem well integrated here. Maybe it would work if it was grated instead of minced? Otherwise it's a decent recipe, but there are so many other cobblers & crisps we hands-down love that we definitely won't be making this one again.
