Sweet peach dressing amps up the summery deliciousness of a simple garden tomato salad.

Ingredients

  • 3 tablespoons red wine vinegar
  • 1 tablespoon chopped fresh thyme
  • 1 teaspoon sugar
  • 1 very ripe peach, peeled and finely chopped (about 1/2 cup)
  • 6 tablespoons extra-virgin olive oil
