Peach-Blueberry Cobbler

Ingredients

  • 1/2 cup(s) sugar
  • 1/2 teaspoon(s) grated lemon rind
  • 1/4 teaspoon(s) salt
  • 3 cup(s) chopped peeled peaches
  • 2 cup(s) fresh blueberries
  • 1 tablespoon(s) fresh lemon juice
  • 1-1/3 cup(s) flour
  • 1/3 cup(s) sugar
  • 1/2 teaspoon(s) baking powder
  • 1/4 teaspoon(s) salt
  • 3 tablespoon(s) chilled butter in small pieces
  • 2/3 cup(s) buttermilk
  • 1-1/2 tablespoon(s) turbinado sugar

Preparation

For filling:

Combine 1st 4 ingredients, add fruit and juice; spoon into 8 inch sq. pan, sprayed.

Bake 400 degrees for 15 min.

For topping:

Whisk dry ingredients, cut in butter, add buttermilk and stir just until moist.

Drop dough onto filling in 8 rounds.

Sprinkle with sugar.

Bake 25 min. until bubbly and golden.
