Peach-Apricot Salsa

    Love the recipe! I served this salsa at Easter with a marmalade braised spiral cut half ham, fresh string beans, buttery herbed mashed potatos, and homemade bisquits. I couldn't find fresh ripe peaches so I used canned peach halves (in natural juices). I drained and diced the peaches and it worked beautifully! Everyone loved the sweet peach flavor pared with the spice and tartness of the other ingredients!! I didn't want to waste the leftover peach nectar so I combined it with my apricot marmalade glaze for the ham. I will definitely use this recipe again and I recommend it. Next time, I hope to try fresh peaches!
