Ingredients

  • 1/2 cup Dijon mustard
  • 1/4 cup lemon juice
  • 1/2 cup olive oil
  • 5 cloves minced garlic
  • 1 1/2 T. rosemary, crumbled
  • ground pepper
  • 6 chicken thighs
  • 2 small zucchini cut into bite sized pieces
  • Place mustard in a bowl. Gradually whish in lemon juice. Add olive oil, garlic, rosemary and pepper. Coat chicken and zucchini in mustard mix. cover and marinate 2 hours, turning occasionally.
  • Drain chicken and zucchini. Spread chicken in baking pan. Bake at 375 for 30 minutes. Add zucchini and cook 15 minutes more.
