Pasta Fagioli Soup

    Pretty Good. I had cajun adouille on hand so I used that instead of the sausage. I increased the broth a bit which was perfect I think. Also had shaved parm on hand instead of asiago. I might try white beans next time but otherwise it was good. The 1/2 c pasta did end up being plenty. Served with hot french bread. Will make again.

    this was one of the worst Fagioli soups i have ever eaten. Canned Minestrone soup added would have been better than the fresh zucchinni and stewed toms.

    This is the absolute best soup we have eaten ever! I made it for dinner and served it with warm whole grain bread. The only change I made was to use fresh Oregano and Basil (the kinds in the tube) - 1 tablespoon each.

    I doubled this recipe and added some chopped onion and some garlic and it was delicious! My friends were over for lunch the next day and I served heaping bowls with crusy bread.My husband was disappointed that he only got one bowl! Oh well I guess I'll make it again soon.

    While I can't comment on its authenticity, it tastes great and it came together quickly. My boyfriend initially thought the half cup of pasta wouldn't be enough, but it cooked up very nicely. I'm looking forward to the leftovers tomorrow. I served this with crusty whole wheat bread to keep to the high fiber theme. :)

    GREAT SOUP! I used cajun pork sausage and pinto beans, and this was delightful...spicy, but delicious...great for a rainy day...quick dinner or hearty lunch.

    Definetly not Pasta FagioIi but who cares. I made this and everyone went crazy, however, as a cook I tweaked it. I added 4 cups of broth,a can of cannelli beans( half drained) increased pasta to one cup and used turkey Italian sausage and Parmigiano...magnifico

    I agree with Don---this is a disgrace to the REAL Pasta Fagioli --this is Sasuage Soup...

    This is a good soup overall although it is misnamed. I added an extra 1/2 cup of broth and have used various flavors of chicken sausage when making this. It is an easy to make soup and tastes really good. Don't rate it low just because it isn't authentic "pasta fagioli"--read the recipe and see if it sounds good to you. For the reviewer who said she has been cooking Italian for 45 years and studied in Rome--shouldn't you already have some great recipe for this soup? Why would you even make this one and then be upset about it if you have all this great experience you wrote about? Something tells me you aren't as smart and authoritative as you think you are.

    My husband and 18 month old loved this soup. I did add onion and garlic at the saute stage, and sauteed the zuchinni to make sure it was soft enough for my daughter. With some crusty cheesey bread it was a great quick and easy meal! Done in 30 minutes start to finish.

    After reading the review I tweak this is a bit. Added onion and garlic to meet when sautéed. The added 1 cup more broth. I used hot Italian sausage for a little kick fresh tomatoes plus the can. Because I added more broth I thought it needed more noodles and man this turned out terrific!! Warm crunchy bread and the meal was complete. Will make again and again as it was quick and simple to make but tasted oh so much than that!!!

    Soup was amazing! Loved by whole family, and they can be pretty picky with their own distinct preferences. I used garlic beef sausage instead of Santa Fe, and it really was good. I highly recommend this recipe. Filling, yet light.

    Who cares what it's called? It seems closer to Fagioli than say "chicken vegetable soup" would be. Why do people feel they have to be so critical? Yes, I mean you DonG, the 45 year veteran Italian chef, these recipes are for busy families whose ability to have a nourishing hot meal in the evening that does not take half a day to make is the is point and essential! How long does your Fagioli recipe take to prepare? Most working people don't have that kind of time and these recipes are geared for THEM. I would rather spend more time with my family at the table talking about our day than I would cooking a weeknight meal. So I'll say what one other reviewer so succinctly stated.......why are you even here? We're you expecting gourmet authentic Italian or just wanting a place to make snide comments. I personally love this site, use lots of the recipes and even if I didn't like something I wouldn't be smarmy or rude about it. As for BPatti and "doodles", this goes for you as we'll.

    My family loves this soup. I use turkey kielbasa instead of chicken sausage. I usually double the recipe since it seems to be eaten quickly. Sometimes I substitute the beans for whatever I have on hand and it still tastes great. It goes together very quickly. One of my favorite quick meals. Serve with a fabulous loaf of bread.

    This was really good and easy to make. Next time I'll add some chopped onion and garlic in with the sausage. Then maybe fresh herbs rather than dried. DH loved this, DD did not though - probably because of the zucchini. Served with a garden salad and hearty rolls. I will definitely make this again.

    Husband and I enjoyed this soup. Followed the recipe but used turkey sausage. Lots of flavor. A definite repeat.

    This soup comes together fast. It's both hearty and healthy. Choose the sausage wisely, it has a big influence on the flavor.
