Passover Apple Squares

- 1 cup sugar
- 1/2 tsp salt
- 1/2 cup oil
- 1 cup passover cake meal
- 3 eggs seperated
- 1 lemon, juice and rind
- 3 large apples
- sugar and cinnamon
- Pare apples and slice thin. Sprinkle with a little sugar and cinnamon. Mix together and set aside.
- In seperate bowl beat the egg yolks, add sugar gradually beating until thick. Add lemon juice, rind and oil. Add to this mixture cake meal and salt beating at low speed.
- Beat egg whites until stiff, fold into yolk mixture. Pour half of batter into 8 x 8 square pan, spread layer of apples. Cover with batter mixture that remains.
- Bake at 350 degrees for 45 minutes or until done. Cool and cut into squares.
