Party Shrimp

Steamed shrimp is a great item for an appetizer buffet--party guests love it whether they're eating low-carb or not.

  • Yield: 12 servings (serving size: approximately 3 shrimp)

Ingredients

  • 1/3 cup finely chopped fresh parsley
  • 3 tablespoons finely chopped green onions
  • 3 tablespoons minced red onion
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon extravirgin olive oil
  • 1/4 teaspoon salt
  • 1/8 teaspoon ground red pepper
  • 1 pound large shrimp, cooked and peeled

Preparation

1. Combine first 7 ingredients; add shrimp, tossing well. Cover and chill at least 3 hours.

Note: To save time, purchase fresh steamed and peeled shrimp from your grocery.
