Parsleyed New Potatoes
We used a vegetable peeler to remove a band of peeling around the center of the potato. It's pretty and less difficult than trying to peel the entire potato, while still exposing children to a handy kitchen gadget. Add 1 minced garlic clove or use Old Bay or Cajun seasoning instead of salt and pepper to boost the flavor.

Ingredients
- 3 pounds small new potatoes
- 1/3 cup butter
- 1/4 cup chopped fresh flat-leaf parsley
- 1 teaspoon salt
- 1/4 teaspoon pepper
Preparation
- Bring potatoes and water to cover to a boil in a Dutch oven over medium heat, and cook 20 minutes or until tender. Drain and return to Dutch oven.
- Microwave butter in a microwave-safe glass bowl at HIGH 45 seconds or until melted. Stir in parsley, salt, and pepper. Pour over potatoes, gently tossing to coat. Serve immediately.
