Parsley and Mozzarella Salad

    Worthy of a Special Occasion

    This salad is excellent!!! The ony thing I changed is that I replaced the mozzarella with reduced fat feta cheese. I've made this several times. Three times this week.Instead of making the dressing everytime now I use Girard's Champagne salad dressing on it and it is even better. Serve with grilled shrimp or pan fried couscous cakes.
