How to Make It

Step 1

Pare a 1-inch strip around center of each potato. Cover and cook in boiling salted water 40 minutes or until tender. Drain potatoes, and set aside.

Step 2

Combine butter, parsley, and salt and pepper to taste; stir well. Pour mixture over potatoes, coating thoroughly.
