Parmesan Polenta

Polenta, a staple of northern Italy, is traditionally made from cornmeal. We added a little Southern flair to this dish by replacing the cornmeal with grits.

Ingredients

  • 2 3/4 cups boiling water
  • 2 cups uncooked instant grits
  • 1/4 cup (1 ounce) shredded Parmesan cheese
  • 1 teaspoon chopped fresh rosemary
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon salt

Preparation

Combine boiling water and grits in a medium bowl. Stir in cheese and remaining ingredients. Serve immediately.
