This versatile creamy sauce is also great over steamed veggies and multi-grain pasta.
1 1/2 tablespoons butter
2 tablespoons flour
1 cup 1% low-fat milk
1/2 cup freshly shredded Parmesan cheese
1/4 teaspoon salt
1/4 teaspoon pepper
1 pinch paprika
How to Make It
Melt 1 1/2 Tbsp. butter in a medium skillet over medium-high heat. Sprinkle 2 Tbsp. flour into melted butter, whisking constantly. Cook, whisking constantly, 30 seconds to 1 minute or until mixture is golden and lumpy.
Gradually whisk in 1 cup 1% low-fat milk, and bring to a boil. Cook, whisking constantly, 1 to 2 minutes, or until thickened.
Add 1/2 cup freshly shredded Parmesan cheese, 1/4 tsp. each salt and pepper, and a pinch of paprika, whisking until smooth. Remove from heat, and use immediately.
Spicy Cheese Sauce: Prepare Parmesan Cheese Sauce as directed, and whisk in 1 tsp. hot sauce.
I do admit I used 3/4 cup 1/2 & 1/2 and 1/4 cup 2%milk also 3/4 cup freshly grated parmesan instead of 1/2 cup. (I LOVE FRESH PARMESAN!) Other than that I followed recipe. It turned out super good! I decided I wanted to add mushrooms, so melted a tablespoon of butter in a small skillet opened a can of mushrooms drained and chopped them then minced a large garlic clove and Shop a quarter cup of onions sauteed it all and added to the Parmesan sauce and it is fabulous thanks for this recipe I will be making!!
This recipe was just what I was looking for. Something simple, fast, and made from scratch. It tasted heavenly. I added tuna and peas and served over spiral pasta. I will be making this often and trying out various cheeses for different flavors. Thank you for this delicious sauce!
Made this to go with linguine, shrimp and vegetables. Very good, but husband requested the next time to make it a little thinner, so I'll up the milk to 1½ cups.
As a side note, if you cook the flour in the butter a sufficient amount of time, you should not have a problem with a floury taste. Mine came out just fine.
Hubby rated it a 4 but I'm rating it a 3 because it still needs further tweaking...
When I get the right ratios I'll post my own version but so far I used all of the above but:
Used seasoned salt to give it a bit more flavor
A bit more paprika
A bit more shredded parmesan (had to add a bit more milk as well)
Served it with browned sundried tomato chicken sausage and pasta.
I was disappointed in the blandness of this recipe and all I could really taste once it was done was the flour. It has potential but I think in the future I will rework it with different seasonings, more cheese, and less flour. Perhaps sub olive oil for the butter to give it extra flavor.
This is an amazing Recipe! My 10-year-old brother and I made this sauce in about 5 min. and it turned out great! We will definitely be making this again :)
PS This sauce is great for a special dinner or an everyday meal.
