Peel and thinly slice 1 1/2 pounds of beets (use a mandoline or v-slicer if you have one). Steam 8 minutes. Toss with 1/4 cup plain 2% reduced-fat Greek yogurt, 1 tablespoon red wine vinegar, 2 teaspoons chopped fresh thyme, and 1/8 teaspoon kosher salt.
