Papaya salsa

  • 1 cucumber
  • 1 papaya peeled, seeded, cut to 1cm cubes
  • 1 mango peeled, stoned, cut ot 1 cm cubes
  • 2 red chillies seeded and finely chopped
  • 7/20 ounce(s) fresh ginger peeled and grated
  • 1 red onion (small) finely chopped
  • 2 zest and juice of lime
  • 2 tablespoon(s) lemon juice
  • 2 tablespoon(s) Thai fish sauce
  • 4 tablespoon(s) olive oil
  • 2 castor sugar


  1. 1. peel cucumber, halve it length-wise, scoop out seeds, dice to 1 cm, put into bowl
  2. 2. add the rest, stir, season with salt and pepper
  3. 3. chill for at least 1 hour
