Ingredients
- 1 cucumber
- 1 papaya peeled, seeded, cut to 1cm cubes
- 1 mango peeled, stoned, cut ot 1 cm cubes
- 2 red chillies seeded and finely chopped
- 7/20 ounce(s) fresh ginger peeled and grated
- 1 red onion (small) finely chopped
- 2 zest and juice of lime
- 2 tablespoon(s) lemon juice
- 2 tablespoon(s) Thai fish sauce
- 4 tablespoon(s) olive oil
- 2 castor sugar
Preparation
- 1. peel cucumber, halve it length-wise, scoop out seeds, dice to 1 cm, put into bowl
- 2. add the rest, stir, season with salt and pepper
- 3. chill for at least 1 hour
