Pancetta Salmon Kebabs with Parsley Vinaigrette

    This is amazing. King salmon is not always available, but it is worth the price when it is. I subbed prosciutto for the pancetta as that is what I had. Absolutely delicious dish. I would serve this to guests; it is a special dish.

    I wouldn't be too excited if I had ordered this in a restaurant and I followed the recipe exactly. Was not highly impressed, It tasted fine, but just not great. The pancetta and evoo was too much, along with the oil from the fish it was too oily/fatty tasting. The dressing was ok, tasted fine. This isn't something that I would mae for guestas I don't think it would have stood out as different or exciting.

    Dish was simple as described. HOWEVER, I found the pancetta too salty for my taste (as did the rest of the family). So I might consider using a small slice of low sodium bacon for the wrap next time. I won't give up - dish was good.

    Excellent. Used sliced proscuitto wrapped around salmon instead of pancetta and it was delectable.

    This recipe was the hit of our Labor Day Picnic. This simple recipe is worth the time you put in to it looking for pancetta. Using the the highest quality ingredietnts certainly makes for the best results. I will certainly make this again.
