I read the reviews and bought slightly firm pears. They turned out really elegant and different. And everyone really liked them. The flavors were all very complimentary.

Be sure to use firm pears. I tried both goat and feta cheese; both were outstanding. Very elegant yet so easy to make. Definitely a "keeper" recipe!

This was very good and easy to make. I used feta cheese because I couldn't find goat cheese and it was a good substitution, seemed to have more flavor. I only added a small drizzle of honey because I was worried it would be too much, but I would definately add more next time.

This was a great combo of flavors...I made this for a thanksgiving day appetizer. I did not put the honey on top. It was easy to make, fresh tasting and a nice choice as the rest of the meal was full of breads and starches and this had none. Everyone loved them.

Wonderful! I used red and green pears for my holiday app. table and it was beautiful. Grocer didn't had enough pancetta so I used some thin sliced salami too...stick to the pancetta or another thin sliced bacon. Wonderful salty and sweet combo!

Impressive, delicious, and easy to make. I gave the pears a swipe with a cut lemon to keep the color appetizing.

Great recipe and you can do SO much with it. I cored and wedged my pears then sliced them thin. I thought the size was better. I then cut the pancetta into strips for my pear slices and then put the cheese on top. I also made some with blue cheese (no honey). They were ALL gobbled up very quickly.

Amazing recipe. These are easy and were raved about by guests. Will definitely make for future parties. Followed directions exactly. Next time I would cut the crisps in half or quarters since they were gone in a flash and quite generously sized.

excellent. My husband ate it and he usually doesn't like new things. We thought it tasted better with a small slice of brie cheese, instead of goat cheese. It gave it more flavor.

This recipe was delicious! I used a sweet apple instead of a pear and everyone loved it. I soaked the apple in water with a bit of lemon juice so it wouldn't turn brown and it worked great, and it didn't alter the taste of the apple. Such an easy dish but it looks and tastes very gourmet!

I'll add my kudos. This is excellent, very easy to prepare, and a bit unusual so people really enjoy it. You can assemble it a few hours ahead of time and hold if you use Fruit Fresh or some other method to prevent browning of the pear. Select firm pears, not ripe ones, and you will not have problems with them being messy to eat. Sprinkling thyme leaves on top makes for a better presentation and enhances the interesting contrast of flavors.

I was a little worried about these flavors working together but it came out awesome! Quick, but can also be mostly made ahead of time. I added some chopped thyme on top and used Anjou pears instead. Check out my post here: http://www.icancookthat.org/2011/12/pancetta-crisps-with-goat-cheese-and.html

Ok this gave me ideas for other combinations too. Like crumbled blue cheese, bacon bits, pecans, and a sweet balsamic vinager. A squeeze of a lemon will help keep your fruit from browning. This version I great also. The ideas are endless popping thru my head.
