Pan-Roasted Cauliflower with Pine Nuts, Garlic, and Rosemary

    Made this tonight, to go with some lime-garlic grilled chicken and corn-on-the-cob with lime butter. Yummy. My family of 4 just loved it. We found some cauliflower at a farmer's market and have fresh rosemary growing in our yard and wanted an excuse to some of it. I will be making it again. It's a cooler summer day here, so didn't mind the oven. Would taste good as a fall meal, though,too, when the weather is cooler. I made a half-recipe (1 head cauliflower) for my family of 2 adults and 2 adult children. We had leftovers. Put in the full amount of rosemary, because that is how much was brought into me, and I didn't want to waste it.

    We used one head of cauliflower and made the rest as directed - so delicious and easy!

    An easy recipe and one that even cauliflower haters will enjoy. I only used one head of Cauliflower so I halved the pine nuts and breadcrumbs but used the full amount of rosemary and garlic , it took less time than directed so just keep an eye on it.
