To prepare salmon, heat a grill pan over medium-high heat. Combine first 5 ingredients; rub evenly over fillets. Coat pan with cooking spray. Add fillets to pan; cook 4 minutes on each side or until desired degree of doneness.
While fish cooks, prepare salsa. Combine bell pepper and remaining ingredients. Serve salsa with fillets.
This is one of my go to recipes now for a healthy meal! I recommend buying fresh salmon (i think that always makes a big difference) and it's better with super ripe tomatoes which can be tough in the winter. It's got a great flavor. I've served it with cilantro rice - just add cilantro/lime to taste! YUM YUMY YUM!
This Salmon recipe was really solid! The salsa was amazing but I would suggest you make it first, put it in the fridge to cool down and then start your Salmon bc it takes quite a few to cut up all of the veggies. The salmon had a great flavor. I put the spices in a zip lock and tossed them in there to coat them. The only problem I had was that when I cooked them on Med/High, the spices tend to burn and so next time I will cook them on Med. Overall great recipe. I also took another cook's advice and went with the Cilantro Lime Rice. It was a nice side dish to tie all of the food together! Will make again for sure!
Good, solid recipe (though not complex enough to "need" a recipe again if I wanted to make in the future). The salsa has a nice clean & crisp contrast to the meaty fish; ate more as a side then "with" the fish. Next time, I'll add some salt and avocado to the salsa mixture for a little more punch. Served with jalapeno mashed potatoes for a nice flavor profile. I would definitely make again as it's easy, quick and simple on a busy weeknight. Using the grill when it's nice out makes clean-up even better; enjoy!
