The peanut dressing was wonderful! It's a great way to incorporate miso into your diet. This recipe made a lot of the dressing, so I'm going to use it on other salads throughout the week. My tofu took a long time to crisp up in the pan, but eventually browned nicely. My husband even liked it. I would use this recipe more for a lunch than a dinner, but will definitely be making it again - especially the dressing!

This was really tasty! A lot of flavor in the dressing and it was very substantial! Definitely will make it again as it's very easy to make as well! Thanks CL for the vegetarian recipes... keep 'em coming!!

Definitely a keeper. I was out of miso so I substituted creamy peanut butter and the dressing was fantastic (but definitely much more than needed for the number of servings). I also added a light dusting of garlic powder and cayenne pepper on the tofu before crisping in the pan. Yum!

We LOVE this meal! Try over a bed of wilted spinach or other greens instead of salad greens.
