  • 1 onion chopped chopped
  • 2 tablespoon(s) olive oil
  • 2 carrots chopped
  • 2 celery stalks chopped
  • 2 garlic cloves
  • salt and pepper to taste
  • 14 1/2 ounce(s) diced tomatoes in can
  • 1 pound(s) lentils approx 1 1/4 cup
  • 4-6 thyme sprigs
  • 2/3 cup(s) elbow pasta
  • 1 cup(s) parmesan cheese


  1. saute 1st 3 ingredients, add garlic and tomatoes approx 8 min until juice is sl reduced, add lentils mix add broth cook until tender, add pasta until tender but firmboil high heat and simmer approx 30 min. total. sprinkle with parmesan
