My husband and I loved this recipe and found it to be even better the 2nd day! I did substitute brown rice for Arborio rice and a more common sausage for the Spanish Chorizo sausage. We don't care for mussels, so they were left out! As far as we were concerned these changes still made a great meal night one and better lunch the next day!

We all felt it needed a flavor boost. Added some more S&P and some Alleppo pepper. Next time I'll do a little bit of tweaking to suit our tastes.

Excellent! We loved this. I used a full pound of shrimp, full pound of mussels, chicken breast and Conecuh brand smoked sausage (a nod to my Alabama roots). I used a small can of diced tomatoes, drained very well. I also added 1/8 teaspoon of turmeric in addition to the saffron (it brings out the gold color even more).

really great! this was my first paella and it was very well-received. left out the mussels, added scallops, and cooked the sausage, shrimp, and scallops while the paella was simmering, rather than before. very good party dish!

We skipped the chicken and chorizo and used an equivalent amount of mixed seafood (mussels, squid, crab and shrimp). I didn't have saffron so instead used turmeric and smoked paprika. Delicious!

One of my favorites, everyone always loves it... Last night I forgot to buy tomato so I used some Sabra homestyle salsa instead, and I think it was even better - gives it a little more kick and some additional flavor.

Made this without mussels only because my local grocery was out, still amazing and cant wait to make it again WITH mussels!!
