If you don't have rock salt, set the oysters on a bed of crushed ice.


4 servings (serving size: 6 oysters, 2 tablespoons mignonette sauce, and 1 1/2 tablespoons cucumber-horseradish relish)

Rock salt
24 shucked oysters
4 lemon wedges


Cover a platter 1 inch deep with rock salt. Nestle oysters in rock salt, and garnish with lemon wedges. Serve with Mignonette Sauce and Cucumber-Horseradish Relish.
