  • 1/2 cup minced peeled English cucumber
  • 1/4 cup rice wine vinegar
  • 2 tablespoons sake (rice wine)
  • 1/2 teaspoon minced shallots
  • 1/4 teaspoon freshly ground black pepper
  • 1/8 teaspoon sea salt
  • 16 shucked oysters


  1. 1. Combine first 6 ingredients in a small bowl; stir gently. Chill 15 minutes. Spoon 1 1/2 teaspoons cucumber mixture over each oyster.
