  • 1/3 cup white cornmeal
  • 1/3 cup fine, dry breadcrumbs
  • 1 1/2 teaspoons Cajun seasoning
  • 2 (8-ounce) containers Select oysters, well drained
  • Cooking spray
  • 1 tablespoon vegetable oil, divided
  • 1 (8-ounce) unsliced loaf French bread
  • 1/4 cup reduced-fat mayonnaise
  • 3 tablespoons Creole mustard
  • 1 1/2 cups thinly sliced romaine lettuce
  • 1 medium tomato, thinly sliced

  1. Combine first 3 ingredients in a bowl; stir well. Dredge oysters in cornmeal mixture.
  2. Coat a large nonstick skillet with cooking spray, and place over medium heat until hot; add 1 1/2 teaspoons oil. Add half of oysters, and cook 3 minutes on each side or until oysters are done and breading is golden. Repeat with remaining oil and oysters.
