  • 2 (24-oz.) packages baby Yukon gold potatoes
  • 1 medium-size sweet onion, cut into 1/2-inch pieces
  • 1 tablespoon olive oil
  • 1 teaspoon chopped fresh rosemary
  • 1 teaspoon kosher salt
  • 2 teaspoons fresh lemon juice
  • 1/4 teaspoon dried crushed red pepper


  1. 1. Preheat oven to 400°. Toss together all ingredients in a broiler pan until well coated. Bake 40 minutes or until tender and browned. Gently smash potatoes with a fork.
