Oven-Roasted Potatoes
These oven-roated potatoes are seasoned with garlic, Italian seasoning, and a little olive oil for a simple, hearty side dish.
Yield: Makes 4 servings
Ingredients
- 4 medium baking potatoes
- 2 tablespoons olive oil
- 1 large garlic clove
- 1 1/2 teaspoons Italian Seasoning
- 3/4 teaspoon salt
- 1/2 teaspoon pepper
Preparation
- Cut 4 medium baking potatoes lengthwise into 8 wedges. Drizzle with 2 tablespoons olive oil, and sprinkle with 1 large garlic clove, minced; 1 1/2 teaspoons Italian seasoning; 3/4 teaspoon salt; and 1/2 teaspoon pepper. Toss to coat. Arrange potato wedges in a single layer on a lightly greased baking sheet, and bake at 450° for 30 minutes or until wedges are golden brown and tender.
