Oven-Roasted Green Beans
This simple side dish can pass as a healthy version of French fries and will add color to any meal. Plus you can roast the beans at the last minute while you finish setting the table.

Ingredients
- 1 pound green beans, trimmed
- 2 teaspoons extra-virgin olive oil
- 1/2 teaspoon sea salt
- 1/4 teaspoon freshly ground black pepper
Preparation
- 1. Preheat oven to 425°.
- 2. Place a jelly-roll pan in oven for 10 minutes. Place beans in a large bowl. Drizzle with oil; sprinkle with salt and pepper. Toss well to coat. Arrange green bean mixture in a single layer on preheated baking sheet. Bake at 425° for 8 minutes or until crisp-tender.
- For baby: Omit black pepper. Cut the green beans into bite-sized pieces. Serve 3 to 5 green beans in a small bowl or on a rimmed plate.
