Ingredients
- 3 cups (1/4-inch) sliced zucchini (2 large)
- 2 tablespoons fat-free Italian dressing
- 1/4 cup Italian-seasoned breadcrumbs
- 1 tablespoon grated Parmesan cheese
- 1/2 teaspoon paprika
- Cooking spray
- 1 teaspoon olive oil

Preparation
- Preheat oven to 450°.
- . Combine zucchini and Italian dressing in a medium bowl; toss well to coat.
- . Combine breadcrumbs, cheese, and paprika in a shallow dish. Dredge zucchini slices in breadcrumb mixture, and place on a jellyroll pan lined with foil and coated with cooking spray. Drizzle zucchini evenly with olive oil.
- . Bake at 450° for 15 minutes. Serve immediately with Lemon Dipping Sauce.
