Preheat oven to 450°.
. Combine zucchini and Italian dressing in a medium bowl; toss well to coat.
. Combine breadcrumbs, cheese, and paprika in a shallow dish. Dredge zucchini slices in breadcrumb mixture, and place on a jellyroll pan lined with foil and coated with cooking spray. Drizzle zucchini evenly with olive oil.
. Bake at 450° for 15 minutes. Serve immediately with Lemon Dipping Sauce.
