Orzo with Broccoli & Feta

Ingredients

  • 9 ounce(s) orzo
  • 1 pound(s) broccoli florets
  • 1/4 cup(s) olive oil
  • 3 tablespoon(s) pine nuts
  • 1/2 teaspoon(s) red pepper flakes
  • 3/4 cup(s) feta cheese crumbled
  • 3/4 cup(s) black olives pitted, halved
  • 1/2 cup(s) Parmesan cheese
  • 1/4 cup(s) basil chopped

Preparation

  1. • Cook orzo in boiling salted water until tender – about 8 min;
  2. • Add broccoli and cook 2 min.;
  3. • Heat oil in small skillet and add pine nuts & red pepper – remove when nuts golden;
  4. • Drain orzo & broccoli and transfer to large bowl;
  5. • Pour oil mixture over & toss;
  6. • Add feta, olives, Parm & basil;
  7. • Season with S&P
