I've been meaning to make this since I pulled it from the magazine more than 4 years ago! Very nice couscous, made to recipe, great flavors and colors. One substitution -- instead of mixing chicken breast into the salad, seared 3/4 lb sea scallops and served along side. Excellent.

This was so delicious, I'm glad there were so many previous reviews praising this dish. It was my first attempt at making couscous, and I will definitely make this often. A great light summer luncheon salad.

Great side dish - skipped the chicken and served with Spice-Crusted Salmon with Citrus Sauce and Citrus-Marinated Mushrooms. Delicious and light!

I've been making this dish for about 5 years now and it's a favorite. I usually double the cranberries and almonds and put in extra cucumber. Great dish for summer cookouts.

I made this as a part of our Cooking Light Virtual Supper Club. I used the larger pearl couscous and thought it was GREAT !
