Orange Pecan Waffles With Orange Butter

Yield sixteen 4-inch waffles


  • 1 1/2 cups all-purpose flour
  • 1 tablespoon plus 1 teaspoon baking powder
  • 1 tablespoon sugar
  • 1/2 teaspoon salt
  • 1 cup milk
  • 3 eggs, beaten
  • 1/2 cup orange marmalade
  • 1/4 cup shortening, melted
  • 1/2 cup finely chopped pecans, toasted
  • Orange Butter

How to Make It

  1. Combine first 4 ingredients in a medium mixing bowl; stir well. Combine milk, eggs, marmalade, and shortening in a small mixing bowl; beat well. Add milk mixture to flour mixture, mixing until blended. Stir in pecans.

  2. Spoon batter onto a preheated, lightly oiled waffle iron, following manufacturer's directions. Cook 5 minutes or until browned and crisp. Remove waffle, and keep warm. Repeat procedure with remaining batter. Serve waffles warm with Orange Butter.
