Orange-Jicama Salad

This bright and refreshing salad could not be easier to toss together and makes a fantastic side dish for taco night. Crisp jicama and juicy-sweet oranges make for quite the dream-team.

Ingredients

  • 1 1/2 tablespoons lime juice
  • 1 1/2 tablespoons olive oil
  • 1 teaspoon honey
  • 1/4 teaspoon kosher salt
  • 1 1/2 cups orange sections
  • 1 1/2 cups julienne-cut peeled jicama
  • 1/4 cup fresh cilantro leaves
  • 2 tablespoons pepitas (toasted pumpkinseed kernels)
