Orange-Glazed Strawberry Cupcakes

    These are really great and easy to make. They taste like strawberry short cakes, but with a little zing from the orange juice. I severed them with more cut up strawberries on top. I think next time though, I'll add more strawberries to the cake mix. All around good! :)

    I made this for my daughter's 7th birthday party. I made 2 batches. The first I followed the recipe exactly. The second, I sifted the flour and other dry ingredients together. The second batch was much fluffier and less dense than the first. These will definitely be added my collection.

    These were amazing! I made 4 batches in 2 days!!! They kept disappearing!!! The first 2 batches I followed the recipe. Then I added more strawberries and orange juice to the batter and they were even better! I was asked to make them again, so I will :)

    I agree with the other reviews that said they were more like muffins than cupcakes. Also, the glaze tasted way too much like powdered sugar and nothing like orange.

    These are tasty cupcakes with a bright flavor thanks to the strawberries. Additional orange juice or orange zest would probably make these even better. The cupcakes are not sweet, but they are delicious paired with the glaze.

    I made these for a baby shower. When I took them out of the oven, they smelled really buttery so I was worried they weren't going to be sweet enough. Luckily, they were delicious, though dense. I would consider these to be more of a muffin than a cupcake. Next time I'll try sifting the dry ingredients to make them fluffier.

    These were very good. As other reviews have said, they do have more of a muffin texture. However, it really works with this particular recipe especially when you add the glaze. I have not gotten anything but complements. It is very easy and great for a summer morning or night. They taste fresh and sweet. I highly suggest you try them.

    I made two batches of these lovely, easy, and sweet Cupcakes Today. I actually used a Whole Wheat Pastry Flour and I Pureed the Fresh Strawberries. Everything Blended together beautifully and Baked up so nice and fluffy. I also made the Glaze and I found it was very sweet and it had the right balance of Orange Juice to Confectioners Sugar. Letting it sit, in the bowl, helps the flavors to Blend and Balance.

    I made these yesterday but unfortunately I did not get to sneak a taste because I was selling them for a bake sale. They looked beautiful and puffed up very well. I used cream cheese frosting instead of the glaze. They remind me of warmer days :)
