Orange-Glazed Carrots

"This is one of my favorite side-dish recipes because it's so easy to prepare. I include orange extract to give the carrots a hint of citrus. I tested recipes for a cookbook on entertaining, so I love to be creative in my cooking." --CL Reader

  • Yield: 5 servings (serving size: 1/2 cup)

Ingredients

  • 2 tablespoons butter or stick margarine
  • 1/3 cup honey
  • 2 tablespoons minced fresh parsley
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon imitation orange extract
  • Dash of dried thyme
  • 1 1/2 pounds baby carrots

Preparation

Preheat oven to 375°.

Place butter in a small microwave-safe bowl; microwave at high 20 seconds or until melted. Stir in honey and the next 5 ingredients (honey through thyme).

Place carrots in a 1-quart casserole, and pour honey mixture over carrots. Cover and bake at 375° for 1 hour or until tender.
