Ingredients

  • 1 (10-ounce) package angel hair slaw (about 6 cups)
  • 1 (9-ounce) package frozen cooked chopped chicken breast, thawed
  • 1 cup matchstick-cut carrots
  • 3/4 cup orange juice
  • 1/4 cup low-sodium soy sauce
  • 2 tablespoons honey
  • 2 teaspoons grated peeled fresh ginger or 2 teaspoons ground ginger
  • 1 1/2 teaspoons sesame oil
  • 1/4 teaspoon crushed red pepper
  • 1/4 teaspoon salt
  • 6 tablespoons honey-roasted peanuts, coarsely chopped

Preparation

  1. Combine first 3 ingredients in a large bowl.
  2. Combine orange juice and next 6 ingredients in a small bowl, stirring with a whisk. Add orange juice mixture to slaw mixture; toss gently. Spoon salad into individual shallow bowls. Sprinkle evenly with peanuts.
