Orange-Basil Orzo Pilaf

While orzo is shaped very much like rice, it's actually a pasta. Your family will run to the dinner table once they catch a whiff of the aromas of fresh basil and orange rind in this pilaf.

  • 1 (32-ounce) carton fat-free, less-sodium chicken broth
  • 12 ounces uncooked orzo
  • 1 tablespoon butter
  • 1 1/4 cups finely diced carrot (about 2 medium)
  • 3/4 cup finely diced onion (about 1 small)
  • 3/4 cup finely diced celery (about 2 stalks)
  • 2 garlic cloves, minced
  • 1/4 cup chopped fresh basil
  • 2 teaspoons grated fresh orange rind
  • 2 tablespoons fresh orange juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper


  1. 1. Place broth in a medium sauce-pan; bring broth to a boil. Add orzo; reduce heat, and simmer 9 minutes or until tender. Drain.
  2. 2. While orzo cooks, melt butter in a large nonstick skillet over medium heat. Add carrot and next 3 ingredients; sauté 5 to 7 minutes or until tender. Add cooked orzo, basil, and remaining ingredients; stir well to combine.
