Open-Faced Eggplant Sandwiches

    We made this without the extra bread and we baked the eggplant instead of broiling it. Delicious!

    I used fresh tomatoes and no marinara sauce. I would also recommend removing the skin as it takes away the bitterness. Looked attractive with a sprig of basil on top. Good side dish or main dish

    This turned out great. I was skeptical that broiling would make the eggplant soft enough throughout, but they came out perfect!
