Onion Relish

This recipe goes with Grilled Rib-eye Steaks with Béarnaise Butter and Onion Relish

  • 5 yellow onions, finely diced
  • 1 cup sugar
  • 2 cups white wine vinegar
  • 1 fresh bay leaf
  • 1 teaspoon kosher salt
  • 1 teaspoon yellow mustard seeds
  • 1 teaspoon coriander seeds
  • 1/2 teaspoon freshly ground pepper


  1. Bring onions, sugar, vinegar, bay leaf, kosher salt, mustard seeds, coriander seeds, and freshly ground pepper to a boil in a heavy saucepan over high heat, stirring often. Reduce heat to medium-high, and simmer, stirring often, 30 minutes or until liquid is reduced by half and mixture reaches a syrup-like consistency. Discard bay leaf. Cool to room temperature (about 45 minutes) before serving.
