Red Onion, Olive, and Feta Salsa

Ingredients

  • 2 large red onions
  • Cooking spray
  • 1/4 cup chopped parsley
  • 1/4 cup sliced pitted kalamata olives
  • 2 tablespoons red wine vinegar
  • 1 teaspoon chopped fresh oregano
  • 1/4 teaspoon kosher salt
  • 1/4 cup crumbled feta cheese

How to Make It

  1. Preheat broiler. Cut onions crosswise into 1/4-inch-thick slices; arrange in a single layer on a baking sheet coated with cooking spray. Coat onions lightly with cooking spray. Broil 4 minutes on each side or until onions begin to brown; cool to room temperature. Chop onions; combine with parsley, olives, vinegar, oregano, and salt. Stir in feta cheese.
