This recipe was delicious. My husband and I loved it. I followed the directions as given and since I didn't have a meat thermometer I baked it for 40 minutes and it was cooked perfectly. I put the pan juices in a small pitcher. I liked the fact that this is a one dish dinner--no need to cook anything else to go with it. It was easy to make and looked beautiful on the platter. I would definately make this recipe for company.

Brussel sprouts?!? Never!! But, in this dish they are absolutely delicious. So much flavor from so few ingredients, in so few dishes, with such a short prep/cooking time. The red potatoes, garlic, shallots, and carrots were roasted to perfection. The brussel sprouts were amazing, with just a bit of a crunch but buttery tasting at the same time. Highly recommend this wonderful dish.
